Good afternoon everyone! How are you?
Well, it’s been just about a week since you’ve last heard from me, so I wanted to update you on what’s been going on since. This week it happened to work out that I could check in an actual week since the last time but hey — you work with what you have.
First off, I had to do some shopping — so at work all the anchors and meteorologists have a schedule of what color to wear each day (so the anchors and meteorologists coordinate). However, I didn’t own a good majority of the colors that I needed 00 yellow, orange, pink, etc. I bought some of those colors the other weekend when I went to Greeley, but I realized I really needed to take some of my paycheck and buy some of these colors.
So I did! After work on Wednesday I asked my boss about some good stores to check out. It actually turned into quite a trip — I checked out GoodWill, and while I didn’t find a lot of clothes, I did find something far cooler:
I FOUND A FONDUE POT!
A 12-piece (tea candle, pot, dipping sticks, plates) fondue pot kit for about four dollars! Now I have wanted a fondue pot for awhile now so I can break it out whenever I have guests (of if I just want to treat myself). So I was incredibly ecstatic about that. From there I went to The Bricks and stopped by the coffeeshop for a caramel coffee before hitting some stores and getting some really great shirts!
I also found some really cute Huskers gear — shirts and earrings — but they were too expensive at the time; I did end up buying a Huskers shirt online since I figured I should probably join the craze since I live in Nebraska now. I’m not a football fan, but it’s the culture, you know?
My last shopping stop was at the Platte River Mall where I got some work clothes and a casual fall shirt. . . .the only thing about my work shirts though is that they are all plain, solid colors; now don’t get me wrong it’s good to have the solid colors, but they aren’t exactly interesting blouses. I’ll have to look for more whenever I get a chance.
But anyway so I now have all the colors I need for work and I HAVE A FONDUE POT AND I’M SO EXCITED TO USE IT!
Oh! Speaking of which, I’ve done some more cooking this week! So on Friday I finally went to the grocery store — I’ve been meaning to go for what seems like weeks now and I finally managed to get over there. It was funny because once I unpacked everything I was surprised on how stocked my refrigerator and pantry were.
But anyway, I did some cooking! I made some more mini donuts (with vanilla extract and pink food coloring) which were — as always — very good; I cut some some avocados and made some guacamole with a good amount of lime juice and Serrano peppers. For breakfast the other day I was finally able to cook up some thick-cut bacon in a pan and some eggs, brew some coffee and make a latte. I also made some shrimp ceviche — I marinated the shrimp for a few hours in lime juice and mix it with chopped up cucumbers, tomatoes, onions and more Serrano peppers.
God I did even realize how much I miss cooking! In fact I still have ingredients to try three other dishes out: a risotto (just to try it!), a lime soup (similar to one I had in Mexico — which is great not only to use my Crockpot but also because the weather is getting chillier), and over-roasted Brussels sprouts (which I’ve has before and love to death). I’ll have to figure out when’s a good time to make all of them!
I also started making a list of things to cook the next time I have guests — the risotto (if it ends up working), fondue, bagels & lox, shrimp scampi, chocolate mousse, french toast. God there’s so much I want to make I can’t wait to try all of them!
Oh! Something fun — I found this website called The Confetti Post where you can mail these teeny packages that celebrate various occasions; each package has things like mini treats, confetti, a balloon, etc. It is literally the greatest long-distance gift ever and I was so excited when I found it! So I sent one to a friend of mine for his birthday and he liked it!
Thus I am going to keep sending them for literally every occasion I can think of!
The last major thing I can recount happened just yesterday; KNOP-TV reserved a spot at the Downtown Halloween Walk (a chance for kids and parents to tick-or-treat in costume) and my coworker and I went down there in costume to hand out candy to kids. I personally love dressing up for Halloween — since it is obviously the best part — and I had a really great time; the weather was like 70 degrees, I didn’t have to wear a coat that ruined my costume, everyone was so cute and some people even recognized me. In fact afterwards we not only grabbed ice cream at Double Dips (a sea salt caramel espresso shake me for) but headed back tot he office and shot the shit with our coworkers for a few hours. That was so much fun — working the night shift really separates you from your coworkers.
But I think that’s all I have to report right now. This week will be strange because I work four days, have a day off (which will be used for going home and going to appointments), report a day, and then have my next day off. Which at first I was really pissed off about since I was going to see about visiting friends this next weekend but oh well. . .I’ll find another day. Maybe the weekend after. . .
